🍳 How to cook

• Pan-seared: pat dry, then sear in a hot pan until golden outside and just opaque inside.
• Garlic butter: sear, then finish with butter, garlic and parsley.
• Steamed with vermicelli and garlic: a Cantonese classic.
• Stir-fried: with asparagus or snow peas, added towards the end.
• Pasta and risotto: stir through at the end so they don’t overcook.

💡 Cooking tip: Scallops cook quickly. Take them off the heat as soon as they turn opaque, or they’ll go tough.

❄️ Storage: Keep refrigerated at 0–4°C and cook as soon as possible after purchase. If you won’t use them in time, freeze them on the day you buy them. Don’t refreeze after thawing.
