29cmA cast iron grill pan built for jingisukan — the Hokkaido style of grilled lamb cooked on a domed plate — made by Ikenaga Iron Works in Japan.
The shape is the whole design. The centre is raised and the rim sits low, so fat runs off the meat, down the dome and into the moat around the edge instead of pooling under it. Less fat under the meat means less smoke, and the vegetables in the moat cook in the juices coming off the lamb. That is the entire idea of jingisukan, and it does not work on a flat plate.
Cast iron does the rest: it takes a while to heat and then holds that heat regardless of what you put on it, so the meat sears instead of stewing.
Why Choose It?
What To Cook On It:
Care:
Season it before first use and re-season occasionally. Wash without detergent where you can, dry it completely over heat, and wipe a thin film of oil over it before it goes away. Cast iron rusts if you put it away damp.
The pan that makes the lamb taste like Hokkaido. Order now.
