Binchotan is Japanese white charcoal, made by firing hardwood at very high temperature and then smothering it in a mix of ash, sand and earth. What comes out is denser and harder than ordinary charcoal — it rings when you tap two pieces together — and it behaves completely differently on a grill.
It burns hotter and far longer than briquettes, with almost no smoke and very little ash. Dripping fat does not flare up on it, so the food is cooked by steady radiant heat rather than by flame. That is why yakitori and yakiniku counters in Japan use nothing else.
Why Choose Binchotan?
Lighting It — read this first
Binchotan is genuinely hard to light, and that is the trade-off for how dense it is. Use a chimney starter and an open flame, and be patient: wait until most of the charcoal has changed colour before you move it across to the grill.
It may crack or pop slightly as it lights. That is normal. The density means it heats unevenly at first, and the trapped moisture has to go somewhere.
Putting It Out:
Where To Use It:
Safety:
Burn only in a well ventilated space or outdoors. Never indoors without ventilation — charcoal produces carbon monoxide. Keep away from children and pets, and extinguish completely before leaving it.
This Grade:
Komaru is the smaller round cut. It lights a little more easily than the larger grade and suits a smaller grill or a table-top burner.
The charcoal the yakitori counters use, in the smaller cut. Order now.
