Female mud crabs are prized for their roe. In season the shell fills with rich orange roe that is the whole reason to choose a female over a male, and the meat underneath is sweet, dense and firm from a life in fast tidal water. We grade to A-Grade only, so the crabs run full and heavy rather than light in the shell.

Live crab loses some moisture once out of the water, so a weight loss of up to 5% between packing and delivery is normal. Keep live crabs under a damp cloth in the refrigerator and cook them as soon as you can.
About the Roe:
Mud crab is a wild caught animal. Fullness of roe and meat varies with the season and between individual crabs, and we cannot guarantee roe in every crab. It is currently in season, so the odds are good and the females are running full — but wild is wild, and we would rather say so up front.
